Ginger chocolate truffles

The easiest truffles in the world to make and ideal for young children to make for gifts.  They are more like old fashioned ‘rum truffles’ as they are made with cake crumbs rather than fresh cream, they taste lovely.  You can alter the flavour by using chocolate cake instead of ginger cake or soak currants in rum overnight and add those too.

Ingredients: for 10-12 truffles

100g plain chocolate chips
25g butter, chopped into pieces
1 x ginger cake, crumbled up
25g icing sugar
3 pieces of stem ginger, chopped (optional)
2-3 tablespoons chocolate sugar strands

How to make Ginger Chocolate Truffles… WASH YOUR HANDS

  1. Melt the chocolate and butter in a heatproof bowl over a pan of barely boiling water.
  2. Crumble up the ginger cake into a mixing bowl and add the icing sugar along with the chopped stem ginger.
  3. Pour in the melted chocolate and butter and stir well to mix.  Leave for 15 minutes to cool
  4. Pour the chocolate sugar strands onto the plate and take small, walnut-sized pieces of chocolate mixture and roll into a ball then roll into the sugar strands to coat it. Pop it into a mini cake case and continue until the mixture is used up. Put into the fridge overnight to set.
