Purple sprouting broccoli is in season in the Autumn and Winter in England and it’s packed full of vitamins and minerals which are not lost as you don’t cook it in this recipe so you have heaps of raw veg which tastes fantastic
serves 4-6 people
100-200g purple sprouting broccoli – around 1 pack
100g shelled pistachio nuts
100g grated parmesan cheese
1 small bunch fresh basil
3-4 tablespoons extra virgin olive oil
zest and juice of a lemon
Whizz the purple sprouting broccoli in a food processor until finely chopped, add the rest of the ingredients, whizz briefly to combine. Taste and add more lemon juice or parmesan if required and serve on buckwheat or wholewheat spaghetti, in panninis, drizzled over veg just before roasting or even in a toasted cheese sandwich
