You will need 1 quantity of mincemeat, homemade is much, much nicer than shop bought, it’s very quick to make and you can choose between my Traditional Mincemeat and Quick Low Fat Refrigerator Mincemeat and 1 quantity of sweet shortcrust pastry. I’d rather you made the mincemeat and bought the pastry than the other way round, you can buy really nice all butter pastry and it’s almost as good as making it yourself.
Ingredients: for 12 mincepies
1 quantity mincemeat
1 quantity sweet shortcrust pastry
2 egg whites
75g caster sugar
100g ground almonds
- Preheat the oven to 190oc/gas 6/AGA roasting oven.
- Roll out the pastry between two sheets of baking parchment or cling film so you don’t have to add any extra flour and cut 12 discs to fit the mince pie tin, grease the mince pie tin with butter and line it with the pastry discs.
- Fill with the mincemeat.
- Now to make the macaroon topping – place the egg whites into the large bowl of a food processor or a mixer fitted with the egg whisk and whisk for 2-3 minutes until it reaches stiff peak, gradually add the sugar then transfer to a bowl and fold in the ground almonds.
- Top the mincepies with the macaroon mixture and bake them for 15-20 minutes, AGA Roasting oven, tray on oven floor for 10-15 minutes.
