Making these yourself guarantees that they are made with the minced meat of your choice, you can use beef, lamb, pork, venison, turkey and flavour them accordingly. Lamb with chopped mint and cumin are fabulous, pork with fresh sage goes well, beef with sundried tomatoes is lovely. You could add in a grated carrot and a splash of worcester sauce too, or some fresh red chili. For a Thai touch use minced turkey and add finely chopped lemon grass and a little grated ginger. 500g lean minced meat
1 onion – red or brown
1 egg
salt and pepper to season
Chop the onion finely, add to the minced meat along with the egg and plenty of salt and pepper and mix together thoroughly. If you like a smoother burger then put the mixture in a food processor and process for a short time.
Shape into rounds and flatten, cover with clingfilm and place in the fridge for at least 30 minutes to firm up before cooking.
Grill or barbeque until completely cooked through, there should be no pink or red meat and the juices should run clear. Split and toast some burger guns, fill with a burger and top with slaw or ketchup.
