Chocolate Coconut Ice Lollies or Popsicles – sugar free, low carb

If you’re trying to cut out sugar, reduce your carbs or just want to eat healthily these ice lollies are a great way to get your ice cream and chocolate fix.  If you can’t get hold of raw cacao then use a good quality cocoa powder.  Raw cacao has an advantage in that it hasn’t been heat treated and so holds on to the vitamins and minerals.  Different cacao has different a different flavour depending on the beans used and which country they were grown so it may vary a little.

Ingredients
400ml coconut milk (full fat, don’t use the low fat stuff it’s horrid)
40g raw cacao powder
75g Sukrin (this is a zero carb, zero sugar sweetener made from Erythritol and Stevia and available on line)
1 tbsp agave nectar

Blend all the ingredients together in a liquidiser or food processor, pour into lollipop or popsicle moulds and freeze for around 4 hours.

This made 11 popsicles or ice lollies in my moulds and based in this there are the following in each serving:

79 Calories; 3g carbs; 7g fat; 1g protein; 1g sugar
